This is one of my go to gluten free meatball recipes. This one is similar to my Baked Gluten Free Ground Turkey Meatballs with a few minor changes. It made about 2 dozen meatballs.
1/3 cup grated Parmesan cheese
1/4 cup shredded Parmesan cheese
1/4 cup mozzarella cheese
1/3 cup flax seed
1 garlic clove, minced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 pound ground turkey
1 egg
spaghetti sauce, optional
noodles, optional
In a large bowl, combine the parmesan cheeses, mozzarella cheese, flax seed, garlic clove, garlic powder, onion powder, oregano, basil, paprika, black pepper. Add the egg and stir. Add the ground turkey. Mix well.
Scoop into balls and place in the slow cooker
Cook on low for 6 - 8 hours.
Serve over noodles and sauce if desired, just sauce or eat plain.
