Where I live in upstate NY, chicken riggies are a very popular recipe. A local paper had a crockpot version. I made it the other night. Great tasting and very easy!!
1 - 2 lbs boneless chicken breast, cut into cubes
1 green pepper, diced
1 red pepper, diced
3 - 5 cherry peppers, diced
1 onion, diced
3 garlic cloves, minced
1 can black olives, sliced
1 jar tomato sauce, I use Classico Fire Roasted Tomato & Garlic or Ragu Simply since they do not contain sugar
1 jar Alfredo Sauce or my homemade alfredo sauce listed below
1 tsp dried oregano
1 tsp dried basil
1/4 tsp black pepper
1 lb Rigatoni pasta, or any other shape if you want
1 cup Parmesan cheese
Add chicken, green/red/cherry peppers, onion, garlic, black olives, tomato sauce, Alfredo sauce, oregano, basil and black pepper to crock pot.
Cook on low 6 - 8 hours. Just before serving add parmesan cheese.
Cook pasta according to package.
Combine pasta and chicken/sauce mixture. Stir and serve.
Homemade Alfredo Sauce:
1/4 cup butter
1 cup half and half or milk
1/4 - 1/2 tsp garlic powder or 1 garlic clove minced
1/2 - 1 cup grated parmesan cheese
1 - 2 TBS dried parsley
1/2 tsp black pepper
Melt butter in a sauce pan. Add the half and half. Simmer for 5 minutes. Add the garlic, parmesan cheese and black pepper. Stir and heat through. Add the parsley. Add sauce to the slow cooker and stir.
NOTE: For a full crockpot of riggies, you will probably want to double or triple the homemade alfredo sauce recipe.
