I make this recipe regularly. It makes a good dessert without the sugar. The berries add the sweetness.
Berry Filling
2 1/2 cups frozen mixed berries, slightly thawed
1 tsp vanilla extract
2 tbsp water
1 tbsp chia seeds
1 tsp cinnamon
Cobbler Topping
2 tbsp melted coconut oil
1/4 cup unsweetened shredded coconut
2 tbsp coconut flour
3 tbs ground flaxseed
1 tsp cinnamon
Pinch sea salt
3 tbsp coconut milk or other milk of choice
Preheat oven to 350°F.
In a small baking dish, mix berries, chia seeds, cinnamon, and vanilla. Spread evenly.
In a bowl, mix coconut, coconut flour, cinnamon, salt, and coconut oil.
Add milk slowly until mixture is slightly crumbly but holds together.
Sprinkle topping evenly over berries.
Bake for 25–30 minutes, until bubbling around the edges and lightly golden on top.
Let sit 10 minutes before serving.
