These are a great low sugar chocolate chip cookie that uses buckwheat flour.
2 tablespoons butter or ghee or coconut oil
2 tablespoons maple syrup, molasses or honey
1/4 cup coconut sugar
1/2 tablespoon vanilla
1 or 2 eggs, 1 makes the cookies crispier
1/2 cup Buckwheat Flour
1/4 cup ground flaxseed 2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
3/4 cup dark chocolate chunks or chips
Preheat oven to 350.
Line a cookie sheet with parchment paper or grease a cookie sheet.
Soften the butter or ghee.
Stir in the maple syrup, coconut sugar, vanilla and eggs.
Add the Buckwheat flour with flaxseed, baking powder, salt and cinnamon.
Fold in dark chocolate chips.
Drop by half tablespoons onto the parchment paper.
Bake for 10 - 12 minutes.
