This salad is a great low carb alternative to potato salad.
1 head cauliflower, cut into small florets
2/3 cup mayonnaise
1 tbsp apple cider vinegar
1/4 tsp turmeric
1/4 tsp chili powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp sea salt
3/4 tsp black pepper
1/3 cup onion, diced
1/3 cup celery, diced
2 hard boiled egg, chopped
Boil a pot of water and add the cauliflower. Simmer for about 5 minutes until tender. Let cool.
In a bowl, mix together the mayonnaise, apple cider vinegar, turmeric, chili powder, garlic powder, paprika, salt, black pepper.
Combine the cauliflower, onion, celery and egg. Pour the mayonnaise mixture over the cauliflower mixture and gently mix.
