Skillet Chicken

An easy chicken dinner that tastes great.


2 tablespoons olive oil
6 boneless chicken thighs, about 1 ½ pounds*
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon butter

1 clove garlic, minced
1/2 cup chicken broth or water
1 tablespoon fresh lemon juice
2 sprigs fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes

1 - 2 cups of frozen vegetables of choice
salt and black pepper to taste
In a large cast iron pan, heat the olive oil over low heat for a few minutes.
In a bowl, mix together the garlic powder, onion powder, paprika, salt, and black pepper.
Add the chicken to the pan and sprinkle the seasonings over the chicken.
Cover and cook for 10 minutes. Flip the chicken.
Add butter and garlic, chicken broth or water, lemon juice, thyme and red pepper flakes.
Add the vegetables. Sprinkle with salt and black pepper
Cover and cook an additional 10 - 12 minutes.
