This is my go to pumpkin bread recipe. It's fairly healthy, quick, easy and tastes good. This recipe is modified slightly from the Starbucks Pumpkin Pound Cake recipe in Fast Food Fix.
1 1/2 cups all purpose flour - I used King Arthur gluten free all purpose flour
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/4 cup coconut sugar
1/2 cup vanilla yogurt
2 eggs
1 cup canned pumpkin
1/4 cup chocolate chips
Preheat oven to 350. Spray a loaf pan with non stick cooking spray or line with parchment paper and set aside.
Combine flour, cinnamon, salt, baking soda, baking powder, clove and nutmeg in a mixing bowl. Set aside.
In another bowl, mix together the coconut sugar, yogurt, eggs and pumpkin. Add the flour mixture. Mix and pour into a greased loaf pan. Top with chocolate chips.
Bake for 55 - 60 minutes. Cool 10 minutes and remove from pan.
