Gluten Free Homemade Chocolate Chip Granola Bars

This is the gluten free version of my original Homemade Chocolate Chip Granola Bars.

1 1/2 cups old fashioned rolled oats
1/2 cup ground flax seed
1/3 cup gluten free 1 to 1 baking flour
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp cinnamon
1 TBS melted butter 1 egg
1/4 coconut sugar
2 tsp vanilla
2 tsp honey
1/2 cup dark chocolate chips
1/4 cup dried cherries, optional
1/4 cup dried blueberries, optional
1/4 cup sunflower seed kernels, optional

Preheat the oven to 350.
In a large bowl, combine the oats, flax seed, flour, baking soda, baking powder and cinnamon.
In another large bowl, combine the butter, egg, coconut sugar, vanilla and honey. Add the oat mixture and stir. Add the chocolate chips, dried cherries and dried blueberries. Stir.
Spray an 8 inch baking pan with non-stick cooking spray or line with parchment paper and add the oat mixture. Pat and spread evenly.
Bake 15 - 18 minutes until firm to the touch.
Cool and cut into bars.
