This is the gluten free version of my original Homemade Chocolate Chip Granola Bars.
1 TBS melted butter or ghee 1/4 coconut sugar
1 egg
2 tsp vanilla
1 tbs honey, maple syrup or molasses
1 1/2 cups old fashioned rolled oats
1/2 cup ground flax seed
1/3 cup gluten free 1 to 1 baking flour
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp cinnamon
3/4 cup dark chocolate chips
Optionally, any combination of: 1/4 cup dried cherries, optional
1/4 cup dried blueberries, optional
1/4 cup dried cranberries, optional
1/4 cup sunflower seed kernels, optional
Preheat the oven to 350.
In a large bowl, combine the butter, egg, coconut sugar, vanilla and honey.
In another large bowl, combine the oats, flax seed, flour, baking soda, baking powder and cinnamon. Add to the butter mixture. and stir. Add the chocolate chips, dried cherries and dried blueberries. Stir.
Spray an 8 inch baking pan with non-stick cooking spray or line with parchment paper and add the oat mixture. Pat and spread evenly.
Bake 15 - 18 minutes until firm to the touch.
Cool and cut into bars.
