It's easy and pretty quick and so good I won't ever buy boxed peanut brittle again.
1/2 cup white sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1/4 cup water
1 cup peanuts
2 tablespoons butter, softened
1 teaspoon baking soda
Line a large cookie sheet with parchment paper and set aside.
Measure out the butter and baking soda and set aside.
In a medium sauce pan, add the sugar, corn syrup, salt and water. Bring to a boil, stirring constantly. DO NOT USE A PLASTIC OR RUBBER SPOON. Use metal or something that won't melt with high heat.
Use a candy thermometer to keep track of the temperature. At about 250 F, stir in the peanuts. At 300 F, turn off the heat and immediately add the butter and baking soda. Stir until the butter is completely melted. Slowly pour over the parchment paper. Use a spoon to smooth out. Let cool and break into pieces.
