Mac and Cheese



This is a kid approved macaroni and cheese recipe that I modified from this macaroni and cheese recipe. This also warms up really well.


3 cups macaroni
2 tablespoons butter
2 cups half and half
1/2 cup milk + additional until desired creaminess is reached
1 1/2 cups shredded mild cheddar cheese
1 cup shredded Colby Jack cheese
2 tablespoons grated Parmesan/Romano cheese
1/2 tsp black pepper
olive oil

Cook the macaroni according to directions.
When done, add to a 9 x 9 or similar sized baking dish. Drizzle with olive oil.
In a sauce pan, add the butter, half and half, milk, cheeses and black pepper and cook over medium low heat. Stir until the cheeses are melted. Pour mixture over the macaroni.
Broil for 5 - 10 minutes until the cheeses are lightly browned.
