One Person Blueberry Coconut Flour Pancakes

These are a great, low carb, low glycemic alternative to regular pancakes. This recipe is modified from a recipe at https://sugarlesscrystals.com/recipe/coconut-flour-pancakes-for-one/.

2 tsp butter or coconut oil
1 Tablespoon coconut flour
1 TBS ground flax seed
1/4 - 1/2 tsp coconut sugar (honey or maple syrup will also work), optional
1/4 teaspoon baking powder
1/8 teaspoon salt
1/4 teaspoon cinnamon
1 - 2 tablespoon milk (half and half, heavy cream or any dairy free milk will also work)
1/2 teaspoon vanilla
1 egg
1/4 cup blueberries, optional

Add butter to a skillet on medium low heat.
Add all ingredients to a bowl in order and mix well. Add to the skillet. Cook on each side for 4 - 5 minutes.
Before flipping, I cut the pancake in half or quarters to make it easier
Remove from heat. Top with a pat of butter and a good quality, real maple syrup, if desired.
