This is a kid approved, homemade nacho cheese sauce. It is adapted from a recipe at Sally's Baking Addiction.
2 TBS unsalted butter
2 TBS all-purpose flour, I used gluten free flour
1 cup whole milk
1 cup shredded cheddar cheese
1/2 cup shredded colby jack cheese
1/2 TBS hot sauce
1/2 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 tsp black pepper
In a sauce pan, melt the butter over medium heat. Add the flour and stir. Add the milk and cook about 5 minutes, stirring frequently.
Add the cheeses. Stir until the cheeses are melted.
Add the hot sauce, cayenne pepper, garlic powder, onion powder and black pepper.
Reduce heat. Heat through 1 - 2 minutes.
