These are a big hit with the kids. I make them gluten free, so I can eat them too. This Mini Pizza Muffin Bites recipe is modified from a recipe at foodal.com.
This recipe is a double batch and makes about 36 pizza muffins.
1 1/2 cup all purpose flour - I use gluten free flour
1 1/2 tsp baking powder
1/4 tsp salt
1 1/2 tsp dried basil
1 1/2 tsp dried oregano
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
6 tbsp grated Parmesan cheese
1 1/2 cups whole milk
2 eggs
2 cup shredded mozzarella cheese
1 cup diced pepperoni slices
Jar sauce
Preheat oven to 350. Spray 2 mini muffin tins with cooking spray.
Combine flour and baking powder, salt, basil, oregano, garlic powder, onion powder, black pepper parmesan cheese. Add milk and eggs. Mix well. Add more milk if too dry. Stir in mozzarella cheese and pepperoni. Using a 1/2 TBS scoop into the muffin cups. Bake 18 - 22 minutes, until puffed and browned.
Heat sauce and serve warm with the muffins for dipping.
