Black Bean Soup

This is a black bean recipe I make about once a month. This recipe is modified from a Taste of Home Slow Cooker Cookbook. I highly recommend the black bean soup at the Middleton Tavern in Annapolis, MD. It's the best!


2 carrots, diced
2 celery stalks, diced
1/2 package mushrooms
1/2 red or yellow onion, diced
3 garlic cloves, minced
1 can diced tomatoes or 1 cup grape tomatoes
1 can black beans, drained and rinsed
2 cups vegetable or chicken bone broth
1 1/2 cups water
3/4 tsp dried basil
1/4 tsp dried oregano
1/2 tsp cumin
1 tsp chili powder
1/4 tsp cayenne pepper
3/4 tsp black pepper
dash - 1/4 tsp sea salt


Add all ingredients in order to a slow cooker. Cook on low for about 6 hours.
