I came across a recipe in the Taste of Home Healthy Cookingmagazine for a black bean skillet recipe. I decided to make it in the slow cooker and added a few extra ingredients. It ended up like a chili only with black beans. It was really good.
1 lb ground turkey
1 green pepper, chopped
1 red pepper, chopped
1 onion, chopped
1 package mushrooms, chopped
3 garlic cloves, minced
2 cans black beans, drained & rinsed
1 can diced tomatoes
1 jar of sauce of your choice, I use Classico fire roasted tomato & garlic sauce
1/2 cup water
1 TBS apple cider vinegar
3/4 tsp black pepper
1/4 tsp cayenne pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 TBS chili powder
Brown the ground turkey and add to slow cooker. Add the rest of the ingredients in order to the slow cooker. Cook on low 6 - 8 hours.
