Baked Mostaccioli

This casserole dish recipe is adapated from a recipe in the Taste of Home Healthy Cooking magazine, December/January 2011 issue. Very good!

8 oz uncooked mostaccioli, or other noodle of your choice
1/2 lb. ground turkey
1 onion, chopped
3 garlic cloves, minced
1 package mushrooms, chopped
1 can diced tomatoes
1 jar tomato sauce of your choice
1/3 cup water
1 tsp dried oregano
1/8 tsp black pepper
2 cups fat free cottage cheese
1 tsp dried marjoram
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Preheat oven to 350.
Cook noodles according to package, and brown ground turkey & onion. Stir in garlic, mushrooms, tomatoes, tomato sauce, water, oregano & pepper. Bring to a boil. Reduce heat & simmer for 15 minutes.
In a small bowl, combine cottage cheese and marjoram.
In a large casserole dish, add 1/2 cup of meat sauce. Layer with half of the noodles, meat sauce, & mozzarella cheese. Top with cottage cheese mixture. Layer with the rest of the noodles, meat sauce & mozzarella cheese. Sprinkle with Parmesan cheese.
Bake, uncovered, at 350 for 30 - 40 minutes until bubbly.
