I made this Cheesy Spinach recipe for Thanksgiving. Pretty good! The original recipe is from Taste of Home's Best of Country Slow Cooker Recipes, pg 90.
2 packages (10 oz. each) frozen chopped spinach
2 cups (16 oz.) small-curd cottage cheese
1 1/2 cups Velveeta cheese, cubed
3 eggs, lightly beaten
1/4 cup butter, cubed
1/8 cup whole wheat flour
1/8 cup all-purpose unbleached flour
1/4 tsp black pepper
Add all ingredients in order to a slow cooker. Stir and cook on high for 1 hour. Reduce heat to low and cook an additional 4 - 5 hours, or until a knife inserted near the center comes out clean.
