Slow Cooker Chili

Slow Cooker Chili, yum! One of my favorites. Chili is actually very healthy for you. Beans are full of fiber and protein.
Celery is a great source of Vitamin C, which helps prevent colds, and helps lower blood pressure and prevent cancer.
Garlic and onions are full of antioxidants and are major super foods which should be eaten every day.
Tomatoes and red peppers are great sources of lycopene which helps prevent some forms of cancer. Peppers are full of Vitamins A, C and K.
Mushrooms are full of potassium which helps lower blood pressure and reduce the risk of stroke. They are also full of riboflavin, niacin, and selenium to protect against breast and prostate cancer.
Cayenne pepper is great for the heart. Here's a story about how a teaspoon of cayenne pepper in hot water can help stop a heart attack. Very interesting.
Cilantro helps with digestion, lowers blood sugar, even combat salmonella poisoning. I sprinkle cilantro over everything I eat. You can even grow your own cilantro, by planting a coriander seed in a pot of soil.
Paprika is full of Vitamin C.
Chili powder is good for relieving joint pain. It is an anti-inflammatory and may help with arthritis.
Parsley is full of Vitamin C, iron and is also a good source of Vitamins K, A and folate.

1 lb. hamburger, or ground turkey, browned
1 green pepper, diced
1 red pepper, diced
1 small onion, diced
3 stalks celery, diced
at least 3 garlic cloves, minced, more to suit your taste
1 15 oz. can stewed tomatoes, undrained
1 jar tomato sauce of your choice, I use Classico Fire Roasted Tomato & Garlic since it does not contain any sugar as many jarred sauces do
1/2 cup water
1 8oz. package fresh mushrooms, cut into pieces
2 cans chili beans, undrained
1 can black beans, drained and rinsed
1/2 tsp black pepper
1/8 up to 1/4 tsp or more cayenne pepper
3 tsp chili powder
1 tsp paprika
1 tsp dried cilantro
1/2 tsp dried parsley

Brown the hamburger, or ground turkey, in a tablespoon of olive oil and add to the slow cooker. Add the rest of the ingredients, in order, to the slow cooker. Cook on low for 6 - 8 hours. Chili is great served with a glass of milk, tossed salad and slice of garlic bread.
