Chicken Club Sandwich

I made this Chicken Club Sandwich recipe for dinner last night and it was delicious. Way better than a Chicken Club Sandwich from a fast food restaurant.
It is adapted from a recipe that was in the Taste of Home Healthy Cooking magazine.

This recipe is full of protein due to the chicken and bacon. Lettuce adds fiber. Tomato adds lycopene. Onions are always healthy since they are a superfood. Cayenne pepper is good for the heart. Cilantro is good for digestion and the blood sugar. You can also substitute wheat rolls for the hamburger rolls.


1 lb. boneless chicken breast, cut into patties
1 tsp. rotisserie chicken seasoning
1/8 tsp. cayenne pepper
1/4 tsp. cilantro
1 lb. bacon
pepper Jack cheese
hamburger rolls
lettuce leaves
1/4 onion, separated into rings
1 tomato, cut into slices
Dill pickle slices
Mayonnaise

Sprinkle the rotisserie chicken seasoning, cayenne pepper, and cilantro over the chicken patties.
To cook the chicken and bacon, I used my George Foreman grill. It cooks the bacon very fast and drains the grease away.
I suggest cooking the bacon first and then adding the chicken patties when the bacon is about halfway cooked.
When the bacon and chicken patties are done cooking, split the hamburger rolls and add the desired amount of mayonnaise. Top with a chicken pattie and a few slices of bacon. Add a slice of pepper Jack cheese, lettuce, tomato slice, a couple of onion slices and a few dill pickle slices. Enjoy! I served this with a handful of cheese puffs. A healthier cheese puff alternative would be Harvest Cheddar Sunchips.
