Tuna Vegetable Noodle Casserole

I made this tuna noodle casserole packed with vegetables the other night and it was delicious. I think it is my favorite tuna noodle casserole recipe that I have tried so far. Since it is cooked in the microwave, it is also very quick to make.


2 cups cooked wide egg noodles
1 can chunk light tuna in water
1 can cream of mushroom soup
1 1/4 cups 2% milk
1/2 cup sour cream
2 cups frozem mixed vegatables, thawed
1/4 tsp pepper
1 cup shredded cheddar cheese

Cook egg noodles according to package directions. Meanwhile, spray a 1 1/2 quart baking dish with non-stick cooking spray. Combine rest of ingredients except cheddar cheese. Add egg noodles and stir. Cook in microwave 10 minutes or until thickened. Add cheddar cheese and stir. Let stand 5 minutes and serve.
