This chicken rice skillet dish was delicious. It's really creamy and more like a soup rather than a skillet dish. If you would like it a bit thicker, you may want to reduce the amount of water used. This chicken rice skillet dish is very quick and easy to make. A dish I will definitely make again.
2 tbs olive oil
1 1/2 lbs. boneless chicken, cut up and cubed
1 can chicken broth
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
1 cup water
1 pkg (16 oz.) frozen mixed vegetables
1 pkg Rice-a-Roni Creamy Four Cheese Rice
1/2 tsp garlic powder
Brown the chicken in olive oil in a large skillet. Add chicken broth, soups and water; bring to a boil. Add vegetables, rice and garlic powder. Reduce heat to medium low and simmer for 20-25 minutes. Add rice seasoning package during the last 5 minutes of cooking.
