Chicken with green olives and rice skillet recipe

I'm not much of an olive eater, but this is a good recipe.
The dry sherry in this chicken skillet recipe adds a nice flavor:

Nonstick cooking spray
1 tbs olive oil
1 1/2 pounds boneless chicken, cubed
3/4 cup dry sherry
3 1/4 cups water
1 chicken bouillon cube
3/4 cup sliced pimiento stuffed green olives
1 1/2 tsp dried sage
1 1/2 cups uncooked long grain white rice



Spray a large skillet with nonstick cooking spray. Add olive oil and chicken over medium high heat. Cook until chicken is browned.
Add sherry, water, chicken bouillon cube, olives and sage; bring to a boil.
Add rice and gently stir to distribute evenly in skillet.
Cover; reduce heat to low, simmer 20 to 25 minutes or until rice is tender.
